Simon Francois de Tours, 17th C.: St. Vincent de Paul. He was a Catholic priest from the south of France who dedicated himself to the poor, and founded the Congregation of the Mission (“Vincentians”), as well as the Daughters of Charity with St. Louise de Marillac.
